As a self-conscious teenager, I spent many sunny afternoons strolling around the mall with my friends. I feigned interest in the tiny tops and tight jeans in their favorite trendy boutiques, but I always preferred the bath and body shops. There weren’t any “popular” scents of bubble bath or perfumed candles that I had to remember there!
One weekend, we got turned around and ended up at the wrong end of the mall. Too embarrassed to be seen consulting a map, I ducked into See’s while my friend searched for the bright red “You Are Here” dot. The lady behind the counter noticed me wander in and asked, “Would you like a free sample?”
Umm… YES PLEASE!! So that became our new tradition: stop by See’s for samples during every shopping trip. The store usually handed out the leftover rejects people refused to buy instead of their decadent dark nougat and scotchmallow bites, but who am I to turn down free chocolate??
But now, I don’t need to drool over See’s candy anymore… I have my own recipe for dark chocolate truffles, and they’re both easy and healthy!
Blueberry Greek Yogurt Truffles
modified from May I Have That Recipe?
With only three ingredients, these are SO easy to make! Customize them by using your favorite flavor of Greek yogurt.
½ c dark chocolate chips
¼ c blueberry nonfat Greek yogurt
3 tbsp unsweetened cocoa powder
- Add the chocolate chips to a microwave-safe bowl, and microwave on HIGH for 20-second intervals, stirring well between each, until the chocolate is melted. (Mine took 3-4 pulses.) Let the chocolate cool for 5 minutes. Gently fold in the yogurt. Refrigerate for at least 25 minutes, or until it firms up but is still shapeable.
- Add the cocoa powder to a small bowl, and line a small baking sheet with wax paper. Remove the chocolate mixture from the refrigerator.
- Working with a teaspoon of the chocolate mixture at a time, shape into a ball and roll in the cocoa powder. Place onto the prepared baking sheet. Repeat with the remaining chocolate mixture, and refrigerate until ready to serve.
