Throughout elementary school, I begged my mom for a shoebox on every February 13th and asked her to cut a slit in the lid. I then pulled out pink construction paper, red glitter glue, and shiny white sequins to decorate the sides. I even pressed on sparkly heart stickers for good measure!

 

The next morning, I carefully held my homemade Valentine mailbox on my lap as Mom drove across town. At school, I placed it on my desk just like the rest of my classmates.

 

After lunch, we walked around the room, dropping paper cards into each person’s mailbox while the parents set up for our classroom party. Although I dreaded the politics of handing out those little Valentines—you had to make sure the sappy ones didn’t go to any of the boys!—I always loved the sugar cookies and conversation hearts that the parents brought in. It was probably a good thing they never made these chocolate dipped marshmallows… I would have eaten every last one and refused to share, even with my crush!

Chocolate-Dipped Valentine Marshmallows

makes 26

These are so cute and easy to make! If you can’t find mini heart sprinkles, substitute red, pink, and white mini spherical sprinkles instead.

½ c. semi-sweet chocolate chips

1 tsp vegetable shortening

26 large marshmallows

3-4 tbsp red, pink, and white mini-heart sprinkles

  1. Combine the chocolate chips and shortening in a small microwave-safe bowl. Microwave on HIGH for 20-second intervals, stirring after each, until the chocolate is smooth and melted.
  2. Working with one marshmallow at a time, dip the top half into the melted chocolate, shaking off any excess chocolate, and decorate with sprinkles. Repeat with the remaining marshmallows. Chill the finished marshmallows in the refrigerator for at least 30 minutes to allow the chocolate to set.

    • We mainly got to eat marshmallows in s’mores and rice krispie treats as kids, so I’m finally starting to play around with them. I have another fun marshmallow treat that I want to try, so keep an eye out for it!

Even though I know it’s more of a Hallmark Holiday, I still like Valentine’s Day — what’s not to love about a day devoted to pink, hearts, and chocolate??

    • Thank you! I bought the heart sprinkles at my local grocery store (Safeway). I’m sure places like Target or Walmart would have them too — and on sale because it’s the day after Valentine’s Day! (If you have Targets and Walmarts, of course!)

    • Thanks!! It’s so hard to beat elementary school parties… Dressing up for Halloween, candy canes for Christmas, and so much chocolate for Valentine’s Day! I had to go to Safeway to exploit their sales on Valentine’s Day chocolate today just to get my fix! ;]
